Healthy habits are great but if they take hours or require lots of extra work, they usually don’t become habits.

That’s why this celery juice recipe is one of our favorite healthy juices. Why? Because it’s so dang easy! It only has one ingredient: gloriously crunchy and sweet California celery and there’s no fancy equipment required. Any household blender will do.

Unlike other vegetable juices like carrot or beet that need a juicer to extract their juice, celery is soft enough that you can blend it in a regular ‘ol blender. Making it inexpensive and easy for anyone to do at home.

California Celery Is The Secret Ingredient

Actually California celery is the only ingredient! Which is important because if you are making a recipe with only one ingredient, it better be good. California grows 99% of all celery grown commercially in the US. So if you are buying American-grown celery, it is coming from California.

Look (or ask your grocer) next time you pick up a head of celery where it is grown to make sure you are getting the good stuff. California celery is fresher, grown under stringent requirements for health and safety, is full of nutrients, and comes from family farms right here in California.

What Is Celery Juice?

The celery juice craze was started a few years ago by Medical Medium Anthony William who championed its many health benefits in his book, Liver Rescue. He emphasized the positive effects it can have on digestion when consumed first thing in the morning on an empty stomach. According to William, celery juice heals and activates the gut by restoring hydrochloric acid.

Celery juice is simply fresh celery stalks that are either processed through a juicer or blended in a blender and then the fibers are filtered out using a fine mesh strainer.

Celery juice has an earthy, herbal taste with a subtle natural sweetness. You can leave the leaves on or cut them off. I like to leave them on because it adds just a little bit of bitterness. If you are sensitive to bitter flavors though, you can cut them off before making the juice.

Not only is fresh California celery super sweet, crunchy and tasty it is also really good for you!. Celery is a good source of vitamins A, C, and K, and essential minerals like potassium and calcium.

It is loaded with antioxidants, and has been shown to lower cholesterol and high blood pressure because it contains a compound called 3-n-butylphthalide (BuPh), as well as reduces bloating.

There is only one thing you really need to make this recipe and that is fresh celery. I also like to add a slice of lemon but that is optional.

Step one

Remove the end. Slice off the root end of the celery and separate the stalks.

Step three

Chop the celery. Cut the celery into 3 or 4 pieces each. Remove the leaves or keep them on, either way is fine. The leaves make the juice slightly bitter, so if you are sensitive to that, you might want to take them off.

Step four

Start blending. Fill the blender about a third of the way full with celery and add ½ cup of water. Blend until smooth.

Step five

Continue blending. Keep adding more celery a couple handfuls at a time blending until smooth before adding more. This will keep the blender from getting stuck on too much celery.

Step six

Strain. Once the blender is full and the celery mixture is as smooth as it is going to get, start straining the mixture. Set a fine mesh strainer over a large liquid measuring cup or bowl and fill with celery pulp.

Step seven

Push through strainer. Using a plastic spatula scrape the pulp against the strainer to extract as much liquid as possible. If you want the juice perfectly clear you can strain it a second time through cheesecloth.

Step eight

Enjoy! Pour into glasses and enjoy! I like to drink it over ice with a lemon wheel on the side.

Celery Juice FAQ’s

What fruit can I add to this celery juice recipe? To get the most health benefits it is suggested that you drink celery juice straight, with nothing added. That being said, it is really delicious with other fruits. I like to add apple, ginger, orange or lemon juice. I also use celery to make my favorite Mexican green juice.

Can I make this ahead of time? For maximum nutrition you really should consume it as soon as you make it. But if you are short on time and want to make it in advance you can keep it in a container with a tight-fitting lid in the fridge up to a day in advance.

How much does this make? One bunch of celery generally yields 2 cups of fresh celery juice. To make a pitcher, use two bunches or heads of celery.

Do I have to peel the celery first? Nope, no peeling necessary!

Ingredients

  • 1 head celery with or without leaves
  • ½ cup filtered water
  • 1 lemon sliced into wheels for garnish (optional)

Instructions

  • Cut the root end off the celery and separate the stalks. Wash them thoroughly to remove all dirt. Cut the celery stalks into 3-4 pieces each. Remove the leaves if you are sensitive to bitter flavors.

  • Fill the blender about a third of the way full with celery. Add the water and blend on high until smooth. Continue adding celery a handful at a time and blending to not overwork the blender.

  • Once all the celery is blended and the mixture is as smooth as it is going to get. Set a fine mesh strainer over a large liquid measuring cup or bowl and pour the celery puree a little at a time through the strainer. Push as much juice as you can into the cup with a plastic spatula.

  • Discard the solids and enjoy the juice over ice with a lemon wheel or just straight up!

Notes

Celery: Leave the leaves on or remove them if you are sensitive to bitter flavors.

How to serve: Technically you are supposed to drink the juice without ice or any other flavoring for maximum nutritional benefits. I prefer to drink it over ice because I like it really cold.

Add-ins: Feel free to add other fruits or vegetables to the juice. I like apple, lemon juice, orange juice, or ginger. Although, again, it is suggested that additional ingredients will detract from the celery juice’s healing abilities.

Storing: The juice is best enjoyed immediately. If you do make it in advance, store in a sealed container in the refrigerator for up to 24 hours.
