What better time than winter, the unofficial season of soup, for Panera to drop a new permanent soup—its first in three years! Lucky for anyone trying to eat clean in 2019, Panera's Ten Vegetable Soup is both vegan (the only vegan soup on Panera's menu) and Mediterranean diet-approved.
As the name suggests, the soup is packed with a TON of vegetables: carrots, celery, onions, red and yellow bell peppers, regular and sun-dried tomatoes, corn, spinach, and poblano peppers. All of those go into a seasoned vegetable stock with chickpeas, dried Aleppo chili, and healthy grains like wheat berries, sprouted short grain brown rice, and red fife. It's also served with a lemon wheel.
As always, you can get the soup in a cup, bowl, or bread bowl, though the last option kind of defeats the purpose of a healthy lunch (those glorious bowls pack a wild 630 calories). A cup of the new soup has 70 calories and 3 grams of protein, while a bowl has 100 calories and 5 grams of protein.
Ten Vegetable is available at Panera Bread restaurants now, alongside other classic Panera soups like Broccoli Cheddar, Cream of Chicken and Wild Rice (see our copycat recipe above!), and Bistro French Onion. You can snag one for $5.19 per cup, $6.19 for a bowl, or as part of a You-Pick-Two meal.
