Here aresome simple ways to add a lot of flavor to your next rib roast.

  1. Usemesquite, cherry or apple woodsto enhance the beef by adding savory aromas and flavors.
  2. Season the outside of the roast with salt and pepper and a little olive oil. Or coat with anyother seasonings that you enjoy.
  3. Make a sauce for dipping. A horseradish sauce is one of my favorites and it’s easy to make with a tablespoon of the following: mayo, sour cream and horseradish.
  4. Bastethe beef with fresh beer, wine, butter or juice every hour. The natural sugars will help caramelize the outside of your beef, giving it a nice crispy and flavorful crust.
  5. Usebacon! You can use bacon strips on the outside of the skin, bacon bits in your bbq rub, drizzle some bacon grease on the outside, inject with bacon grease or go full in and wrap the prime rib in bacon.
  6. Use a roasting rack. Place the prime rib on a roasting rack and set in aroasting pan on your grill.I always add a little water to my pan and wow does it give you some amazing flavor!
  7. Use freshherbs. I love using fresh thyme, sage, oregano and parsley. Or use a premade herb blend such as Herbs deProvence.
  8. Score the beef and add whole peeled garlic cloves. This adds a beautiful flavor and aroma to your roast.
  9. Use a rotisserie. The roast bastes itself, which is great for flavor, and it looks pretty amazing turning inside your grill.
  10. Pepper it up with festive colored red, green and black peppercorns.

Grill over indirect medium heat (350 ̊ – 450 ̊F). For a 5-6 lb bone-in roast, it will take about 1.5 to 2 hours.
